Carrot cake isn’t exactly high on my list of desserts I specifically crave, but every once in awhile, there’s nothing I want more. Part of the reason why I love carrot cake is that I can momentarily convince myself that it’s somewhat healthy (hey, it has a vegetable in it!), the other reason is more honest: I love cream cheese icing. The only sticking point I have with carrot cake are the interpretations of it that get muddled with unnecessary ingredients like pineapple, raisins, and chopped walnuts.
Luckily for me, Blueprint Cafe’s carrot cake is exactly the way I like it: a straight-up carrot cake that’s slightly spongy, with finely grated carrots that give it a refreshing texture. The most impressive thing about the cake is that it manages to taste light, which plays nicely into my self-deception that it’s healthy.
Carrot cake is nothing without a good cream cheese frosting, and Blueprint Cafe’s version is specifically engineered to pack as much icing per square inch as is scientifically possible. The four-layer cake has three interior stripes of sweet and creamy icing, plus a thick layer on the top and sides, meaning you get a hit of icing in every bite.
The strawberries were an excellent touch as well — you’d never think that strawberries go well with carrots, but add a little cream cheese icing to the mix and it just works.
